Chinese Vegetable Fried Rice

My kids all time favourite dish, Another way to add vegetables to kid menu in a way they like and enjoy to eat it. I try to add more vegetables to my fried rice. It goes well with Chicken Manchurian.  Whenever I have the leftover rice in the fridge and  my kids want a quick food I go for  this dish. Go for this fried rice dish and share your views.



Ingredients

Basmati Rice/Left over rice - 2 cups
Olive Oil       - 5tbsp
Big onion      -1
Capsicum     -1
Cabbage      -1 cup
Mushrooms  -5
Carrots        -1
Beans          -1
Garlic           - 5 cloves
Spring onion -2 tbsp
Soya sauce - 1 tbsp
Pepper powder -1tbsp
Green Chilli -1
Eggs - 2 (Optional)
Salt

Preparation: 
Soak the Basmati rice for half an hour and cook with 1:2 ratio by adding 1 tbsp oil and 1tbsp salt to rice.
Allow to cool.
Finely chop onion, garlic, beans, chilli.
Cut capsicum, mushrooms, cabbage length wise.
Beat the 2 eggs with little salt and pepper and scramble.

Method:

1.Add oil in the pan, When hot add the finely chopped chilli, garlic and onion fry well for 1 minute
2.Add the chopped carrot, beans, mushrooms and fry well.
3. Add cabbage and capsicum.

4.Now add 1 tbsp pepper powder and 1 tbsp soya sauce and stir well.

5. Make a hole in the center, add egg and scramble it.



5.Add the rice to it and mix well. Garnish with Spring Onions. Serve HOT!!!


Notes:
1. Cook in high flame
2. Don't overcook the veggies.
