Lady's finger/Vendaikai fry
Okra - a sticky vegetable with loads of health benefits. I like ladies finger poriyal or tangy pachadi. I had a friend who usually bring this spicy okra fry as a side dish for chapattis. Since then I wanted to try this recipe. It goes well with sambar rice and Rasam.
Okra has a unique flavour and taste by itself and usually most kids don't like it because of it is stickiness. My mother usually says if you eat lady's finger often you can excel in Maths. I'm not sure how true it is but I have successfully completed bachelor's degree in Mathematics :)) LOL
Lady finger / Okra helps to reduce the blood sugar, The rich fibre in okra ensure easy bowel movements and serve as a natural laxative.Okra is a best medicine for those who suffer from constipation.Pregnant women should consume Okra/Ladies finger on daily basis as it has good folate content,it helps to reduce the neural tube defects in the new born babies. Okra can be cooked in many ways. This is a simple,spicy Okra / Lady finger recipe.
Ingredients:
Okra/Lady's Finger - 500gms
Big Onion -1
Tomato -1
Chilli powder- 1tbsp
Turmeric powder-1/2tsp
Jeera powder-1.2tsp
Curry leaves - 1 sprig
Dry chilli -1
Mustard seeds -1 tsp
Salt as necessary
Oil -2tbsp
Method:
1. Wash the Okra nicely,use a clean cloth and wipe the water from the Okra / Lady finger.
2. Cut as in the picture.
1. Heat the pan with 2 tsp oil
2. Add mustard seeds and when it splutter add the curry leave, dry chilli, onion and fry well.
3. Now add the finely chopped tomatoes followed by chilli powder, jeera powder, turmeric powder and salt and fry for few minutes.
4. Now add the okra and fry well until it is well combined.
5. Keep the fire low, close and cook for another 15 minutes, open the pan and keep stirring now and then to make sure it cooks evenly.
6. Spicy Okra/Lady's finger fry is ready.
Notes:
1. I always wipe the okra after washing, you can add 2 tsp for curd in order to avoid stickiness but the taste will be different.
2. You can add shredded coconuts finally it will enhance the flavour and taste.
