Cashew Pakora/Fritters

As I have mentioned I am crazy fan of Indian street food, Pakora is also in my favourite list. When it rains having a plate of Pakoras /Bajji with hot tea would be best combo. Whenever I go to my hometown for vacation my cousin brother buy me hot onion pakora's from a local street shop. It is very crispy outside and soft inside.I always wanted to try doing it in home. My kids don't prefer onions so i have substitute more cashews with less onion. Believe me Kids loved it very much especially the  small crispier ones.Hope you will try in your home and post your comments. Ingredients:

Besan Flour - 1 Cup
Rice flour -1/2 Cup
Cashews -100 Grams
Onion-1 (Chopped Finely)
Chilly -2 (Chopped Finely)
Coriander leaves -1 sprig (Chopped Finely)
Curry Leaves -1 sprig (Chopped Finely)
Ginger -1 inch (Chopped Finely)
soda -a pinch
Ghee/Butter -2 tsp
Oil for frying
Salt as required

Method:

1. Add the onion, ginger,chilly,curry leaves,coriander leaves,salt and mix well with your hand.Onion
    and salt when mixing will leave some water.

2. Now add the cashews ,flour ,soda and mix well.Now add ghee and if necessary sprinkle little water and mix well. It should not be watery.


2.Now add oil in a kadai, When hot keep the fire in medium and add the pakoras to the hot oil,Turn  
   and fry until it turns to golden brown colour.












3.Hot Cashew Pakora is ready.
