Pan Fried Chicken



Most of the time, I make curry or kulambu with chicken, but my kids love to have fried chicken. Long time back I ate  southern fried chicken in a restaurant called"Table manners" in Singapore, It was a simple dish, good to go with a dip. Hardly I make fried dishes in home if at all Chicken 65.This time for a twist I wanted to prepare the fried chicken but to be guilt free I pan fried it with olive oil. It was Big hit among Kids. Please try it in your home and pass your comments:))

Ingredients:
For bread crumbs seasoning:


For  Chicken Marinate:


1. First clean the chicken well and in a roller beat the chicken well until it is well flattened.
2. Now mix all the ingredients mentioned for marinate and marinate for 2 hrs,would be nice  if you marinate overnight.
3. Take the marinated chicken and as shown below,first coat it in the flour mixture evenly then dip it in the egg mixture and then dip in the bread crumbs seasoning. if you want more crispier repeat the step again.
4. Heat olive oil in a pan and put the chicken and cook covered for 5 minutes and then turn over and cook covered for 5 minutes.

5. Again cook uncovered until the chicken is well cooked and turns to golden colour.
6. Serve hot with sauce of your choice or mayonnaise.



Tips:
1.I have used dried parsley,thyme and Oregano. To add more flavor to the seasoning you can add Onion powder and garlic powder when marinating, If so don't use ginger/garlic paste.
2.The long the chicken gets marinated it will be juicy.
3.Cook the chicken in medium  heat.
4.If you don't prefer to season the bread crumbs,you can sprinkle the seasoning once the chicken is fried for a different taste.
5. I have used olive oil,You can use any cooking oil.
