Mee Goreng means Spicy fried noodles, I first tasted this Mee Goreng when we went for a trip to penang, Malaysia. Penang is called as a "Food Paradise" of Malaysia. Though the beaches are not very nice in Penang island but people prefer to travel to experiment unique flavours. This is also one of the favourite food in Singapore, Malaysia and Indonesia.
Mee means Noodles and Goreng means fried, There are different variations in this recipe, I have made this without adding belachan and anchovies. When I was pregnant with my Baby Boy I always crave to eat something sweet and spicy, I prefer eating this Mee goreng or Chinese Manchurian dishes, Though it is not advisable to eat more spicy dishes during the pregnancy time :))
The preparation time is little long but it is worth for the time consumed. Hot and spicy noodles with unique flavors for sure will tempt you to crave for more !!!
Ingredients:
- Yellow Hokkien Mee - 500 gms
- Baby Spinach - 1/4 cup Roughly chopped (You can substitute spinach with Cabbage)
- Tofu Cubes - 1 Cup
- Eggs - 3
- Tomato Sauce - 3 Tbsp
- Soya sauce - 1 Tbsp
- Cooking oil - 4 tbsp

For Sambal:
- Dries chillies: 10 de seeded (Soak in hot water for 10 mins)
- Tomatoes - 2
- Shallots - 8
- Peeled Garlic - 8 cloves
- Ginger - 1/2 inch
Preparation:
- Cut the Tofu into small cubes and fry in oil
- Beat the eggs well with a pinch of salt and fry.


Method:
1. In a mixer grinder, Grind the dried chillies, Tomatoes, garlic, onions and ginger by adding 1/2 cup of water,grind to a smooth paste.

2. Heat the kadai with oil,when the oil is heated add the grind paste and add salt, Cook in a medium heat, It will take 10-15 minutes. When the oil starts to separate from sambal add the Mee (Yellow noodles) and stir well until the noodles is well mixed with the sambal, Reduce the flame, cover the pan and cook in low heat.

3. When the noodles are cooked add the spinach, fried egg and Tofu and stir well.
4. Now check the salt and add the soya sauce and Tomato sauce to it and stir nicely in high heat.

5. Finally add spring onion and serve hot.
Tips:
- If you use dry chilly with the seeds the dish will be very spicy, so always de-seeded the chilly and soak it in the hot water and use only the chilly for grinding.
- I have added only eggs and tofu but you can add fried chicken, Prawns to this dish.
- Tomato sauce gives you sweet flavor you can ignore if you don't prefer sweet version, but I always prefer the sweet and spicy mee goreng.
- If you prefer to be more sweet then add a dash of sugar finally, else sugar will get caramelised.
- The sambal paste should be woo watery else the noodles will be soggy,So don't add more water to the sambal paste.
- If you cant get Yellow noodles,try using Instant noodles.Boil and keep the noodles and follow the rest of the procedure same( But i haven't tried using Instant Noodles).
- I don't prefer anchovies and belachan so i haven't added to be more flavorful you can add anchovies and belachan when you are grinding the sambal paste.
