I don't eat chicken when I was young, I love to eat mutton but after getting married and moving to Singapore I started eating chicken as my hubby loves chicken.
In India, My daddy buys chicken from the chicken stall where they will remove the chicken skin and other unwanted stuffs and they do cut the chicken as per the size we require, we need to just wash and cook but when we came to Singapore things looked very different. Major supermarkets sell fish and chicken either they where whole chicken or chicken parts sold separately. The first time when we bought chicken from the super market it took more than one hour for us to understand how to remove the chicken skin,cut and clean it but now my hubby does in just 10 minutes time. The best part is mastering the skill we realised that in wet markets they have chicken stalls where they cut and give the chicken but is little expensive LOL:))
I always wanted to try chicken with different combinations of spices, This is one of the Hot and Spicy chicken dish with a nice aroma ...If you really crave for hot chicken curry for sure this dish is for you :)) Why not try this chicken Vindhari dish ...nicely blended with spices.

Ingredients:
- Chicken - 1 Kg
- Onion - 4
- Tomato -1
- Coconut -1/4 cup
- Garlic- 10 cloves
- Dry chilly -15
- Coriander seeds -2 tbsp
- Cumin Seeds- 4tbsp
- Khus Khus -2 tbsp ( Substitute will be cashew nuts)
- Mustard- 2tbsp
- Curry Leaves - 1 sprig
- Coriander Leaves - 1 sprig
- Turmeric powder-1/2tsp
- Salt - As per taste

Preparation:
1. Roast the dry chilly,coriander seeds,cumin seeds,mustard seeds,khus khus and grind to a fine paste.
2. Peel garlic and ginger and make a fine paste.
3. Grind coconut to a smooth paste.
4.Chop Onion and tomato horizontally.
5. Marinate chicken with salt and turmeric powder.

Method:
1. In a kadai with oil,add onion,curry leaves saute well when onions becomes transparent.
add the ginger/garlic paste and stir nicely,Now add the chopped tomatoes and add the chicken pieces cook in medium heat.

2. Now add the grounded spice paste,salt and add necessary water to cook the chicken.
Chicken will leave some water so add only little water.
3.When chicken is half cooked, add the coconut paste keep in medium heat and allow it to boil well until the chicken is well cooked and nice aroma comes out. Finally when oil stats to get separated, add the chopped coriander leaves and turn off from heat.
4. Hot Chicken Vindhari is ready,It is a curry dish well combined with rice ,parota and chapatti.
Tips:
1. If you don't want spicy,Less the dry chilly and add little pepper at the final stage.
2. If you prefer to be gravy dish add little water.
3. When marinating you can use little curd so that the chicken will be very tender.
4,If you don't find Khus Khus,you can use cashew nuts but taste might be different.
