The Popular street food in India is Bajji, I am great lover of most of the street foods. When I was staying in women's hostel in chennai,during weekends we used to go to the Santhome Beach. It has most of the local street food stalls, My favourites are Hot and fresh catch seafood, Spicy Bajji,sundal ....:)) List is very long. Most of the stalls open in the evening and weekends it is very crowded. The below is the typical Bajji stall is the beach,they make hot bajjis and there will be people who will go and serve hot bajjis in the beach.Many of them buy assorted bajji platter since it have all varieties of Bajji.
Though I prepare Bajji in home I personally prefer bajji's made in local stalls.I have got this recipe from one my favourite Bajji stall aunt, I am regular customer for her and she gave me this recipe. Her Bajji are always accompanied with Tomato chutney and not coconut chutney.

You can use Plantain,Onion,Brinjal,cauliflower,potatoes,Boiled Egg,Milagai( Special Bajji Milagai). I have made Plantain/Onion Bajji.
Ingredients:
- Besan Flour /Kadalai mavu - 1 Cup
- Rice Flour - 1/2 cup
- Plantain -1
- Onion -1
- Chilly powder - 1 tbsp
- Asafoetida- 1/2 tbsp
- Cumin/Jeera Powder- 1Tbsp
- Cooking Soda/ Bi carbonate -a Pinch
- Red Colour - a Pinch (Optional)
- Salt for taste
- Water as needed
- Oil
Preparation:
Peel the skin of the vegetable skin and cut into slices.
Method:
1.In a bowl mix besan flour,rice flour,chilli powder,asafoetida,jerra powder,cooking soda,red colouring,salt and combine well,Then add necessary water to the batter.The batter should be in correct consistency so that it can coat the vegetables,It should not be watery.

2.Heat a kadai with oil, pour enough oil,the bajji should immerse in oil . When the oil is hot, Dip the vegatable in the bajji batter coat the veggies fully with the batter and put it slowly in the hot oil, ,Adjust the flame to medium so the veggies can be cooked in medium heat.
3. When it turns to golden colour turn and cook the other side. Drain the oil well and ready to serve.

Tips:
1. The batter consistency should be correct,Shouldn't be too thick or too watery.
2. Red colour is optional,Cooking soda is added for to get fluffy bajjis.Don't add too much
Cooking soda.
3.Mix the batter evenly and the check the oil temperature before you put the bajjis,Just put a little drop of batter into the hot oil it should pop up as soon as to the top layer of the oil and should not go down the oil.
