Mini Vanilla Cupcake

This is a simple,easy and basic vanilla cupcake recipe, I wanted to share this for very long time. Finally today I made this cup cake for my kids. Although there are many variations of cupcake, most cupcake mixtures are based on basic ingredients like butter, sugar, egg and flour. My kids loved it a lot, It was very spongy and the house was filled with the cake flavor. I made 2 dozens of cupcakes and just couldn't resist eating it, we all finished in a day. So yummy buttery cakes.


Ingredients:-

Butter - 115 Gms
Caster sugar - 115 Gms
Eggs - 2
Self raising flour - 115 Gms
Vanilla Extract - 1 tsp
Milk - 2tbsp

12 Hole cupcake tin, Lined with Paper cups.

Method:

1. Preheat the oven to 180 Degree Celsius (350 Fahrenheit) Gas 4.

2. Put the butter and sugar in a large bowl and beat until pale and fluffy.



3. Beat in eggs one at a time. Sift the flour and mix well



4. Now add the vanilla extract and milk and combine well.




5. Spoon the mixture in the paper case and bake in the preheated oven for about 15 minutes until risen and a skewer inserted in centre comes put clean.




6. Hot and Spongy Cup Cakes are ready to serve.



Tips:


1. If you cant find self raising flour, you can use all purpose flour and baking soda.

2. This is a basic cup cake recipe, you can decorate with your own frosting and make it more richer you can add nuts and chocolates to it. Will post other versions soon.
3. For the Creamed mixture, Where the butter and sugar are beaten together, the butter should be in the room temperature until soft.
4. The most common sugar used for baking is caster sugar but you can use other sugars and sweeteners but the flavour will be different.
5. Eggs enrich the cakes taste and binds the ingredients together, best used under room temperature and i have used medium size eggs.
6. Quantities are very important when baking, using wrong proportions can lead to dis appointing results.
7. Line the paper cases before filling in the cake mixture.
8. Some ovens cook faster so make sure your are around and check with a skewer. The cake should be evenly browned and risen.
