Methi Rice / Methi Pulav:
This is pulav is made with Fenugreek leaves( Methi /Vendaya Keerai). This has many health benefits.Fenugreek leaves slows the absorption of sugar in the body . Methi Leaves help to lower blood sugar in people with diabetes. Methi leaves has a mild bitter taste but when made as pulav it is very delicious to eat.
I prepare this Methi Pulav often for my kids. They enjoy eating this rice and this goes well with any raita. Fenugreek/ methi leaves increase the milk flow for breast feeding mums. I am sure that you will enjoy this healthy and tasty dish.

Ingredients:
Methi leaves : 1 cup ( Only the leaves)
Basmathi Rice: 1 Cup
Water : 2 cups
Onion :1 ( Finely Chopped)
Tomato:3 ( Finely Chopped)
Ginger/Garlic Paste: 1 tbsp
Coriander powder:1 tbsp
Chilli Powder:1 tbsp
Turmeric Powder: 1 tbsp
Roasted cashews : 10 nos
Oil- 1 tbsp
Butter/Ghee- 1 tbsp
Salt - to taste
Seasoning:
Cinnamon - 1'
Cardamon: 3
Bay leaves:1
Fennel Seeds:1 Tbsp

Method:
1. Add oil and butter in a kadai,when hot add the ingredients mentioned in seasoning,followed by ginger-garlic paste and onion.

2.When onions turn to golden brown colour,add the methi leaves and saute for 5 minutes and add the chilli powder,turmeric powder,coriander powder ,salt and combine well.
3. Now add the tomatoes and stir well until a thick gravy forms.
4. Add the rice and 2 cups of water, when it starts to boil, check the taste and pressure cook for 3 whistles.
5. Add the roasted cashews,Yummy and Healthy Methi Pulav is ready.

Tips:
1.If you soak the Basmathi rice, then add only 1.5 cups of water and keep only for 2 whistles.
2. If you use the Ponni rice , you should add 2 cups of water, if you are cooking in the cooker.
3. If you want more flavorful, you can add little mint leaves also.
