There are many versions of egg curry,the below is spicy egg curry dish. This curry has a unique spicy taste. This will be a good side dish for Idly, Dosa, Rice, Pilaf rice and Breads.

Ingredients:
Boiled Eggs : 5
Onion : 1
Tomato : 2
Green chilly : 2
Garlic : 5
Ginger : 1/2 Inch
Curry Leaves : 1 sprig
Mint Leaves - 1 tbsp chopped
Chilli Powder : 1 tbsp
Coriander powder : 1 1/2tbsp
Turmeric Powder : 1 tsp
Coriander Leaves : 2tbsp finely chopped
Salt for taste
To Temper:
Fennel seeds : 1 tsp
Cinnamon - 2
Cloves:3
To Grind:
Coconut:1/4 cup
Pepper : 1 tsp
fennel : 1 tsp
Garlic : 3 nos
1. Heat the Kadai / Heavy Bottomed vessel with oil and when oil is hot add tempering items. Then add the chopped ginger, garlic (You can use ginger / garlic paste also) curry leaves and green chillies to it. When the aroma of ginger / garlic comes add the onion and mint leaves and fry till the onion turns to golden colour.
2. Now add the tomato followed by turmeric powder, chilli powder and coriander powder and salt .Stir well until the raw smell goes.
3. Once the curry thickens, Add the coconut paste to it.
4. Bring it to boil, If necessary add water to it , Now add the boiled eggs and let it be in simmer for 5 minutes until the spice mix with the egg.
5. Garnish with chopped coriander and turn off from heat.
